Need good beef sausage ingredients

I'm trying to make beef smoked sausage links and need some advice on 70/30 fat to meat ratio plus ingredients and spices. :chef:

I've included a link to beef sausage recipes that explains what fat/lean ratio should be. Most of the old sausage makers down through the Hill Country, mostly German and Czech, generally used only 3-5 seasonings. Black pepper, salt and garlic being the top three. Along with red pepper flake and paprika. Since you didn't mention what style of sausage you were aiming for the site covers several types. Thanks for the response I'm going to make 5lbs.of hill country smoked sausage and I'm adding minced garlic ,sage, salt,black pepper, red pepper flakes and paprika if I missed something let me know ,well appreciated.

I would omit the Sage but that's just a personal taste preference :dont: :salut:

Add one level teaspoon of USDA Cure #1 (pink salt) Per 5# sausage mix.
