Beef cheek pastrami!!

Beef cheek pastrami!!
So I put the beef cheeks in a brine Thursday evening. Brine consisted of home made mixture of pickling spice, fresh garlic, Chile guajillo, and some fresh wild onions that grow behind my houses down fresh flowering thyme from the garden. Took it out of the brine this afternoon and coated in fresh ground coriander, fresh ground black pepper, fresh ground fennel seed and some standard chile flakes. Put on the smoker and cooked to 135 then wrapped in foil (didn't want super heavy smoke flavor) and took out when probe reached 190. Let cool to room temperature and sliced thin. This stuff was fantastic, would recommend anyone to make it, nice change of pace from the regular brisket flat pastrami we make at the house. Also smoked three racks of ribs and some whole yard birds, not pictured, but everyone has seen those before. Sorry for the picture being sideways, I do this from my phone...

That looks amazing. Where did you get the beef cheeks from? Grocery...butcher?

I picked them up pre-packaged from HEB and trimmed them at home. Had lots of waste, about half of the package was fat and trash and sloppily butchered. The muscle was pretty cut up. If you can find them pre-trimmed and as a whole muscle I would recommend that.

I am a big fan of beef cheek. I have it specially ordered because it isn't available to me anywhere close. The butcher thinks I'm crazy. I'm gonna take him some barbacoa tacos one day and see what he thinks then. After that, I'm gonna make him some of this. Well done, sir.. Well done!!
