Bacon by EQ or other means

Postby Copasspupil » Tue Feb 19, 2019 12:41 pm

Do you use this method or some other way to perfect your bacon? I’ve been reading up in this way but have never tried it. I did the soak method(soaking it for a number of hours) on my burnt ends and it came out great. Anybody familiar with EQ?

EQ method is based an a percentage of mass/weight of the meat and how salt, Prague pink salt and sugar are added to the cure.

Most of mine in the past were based on a recipe given to me by some friends at work. The research I’ve done lately have stated if you follow the EQ method, the meat does not come out salty as it is a specific ratio of salt, pink salt and sugar. I hope that makes sense. I had to buy a scale but it didn’t come in on time last week for my bacon I did so I soaked it for a while then smoked the bunch.

You can YouTube it under EQ bacon curing.

That's interesting but too scientific for me lol. The only EQ I know is part of my Onkyo system
