Dusting with a new layer of salt today, this thing has tightened up CONSIDERABLY. Tells me that after only 6 days, it's near ready for part 2. Weather over the next couple days is just not going to allow me to hang it the way I wanted. So, it will continue in the fridge a bit longer. I normally follow my salt phase with a sugar bath for about 24hrs/lb. I'll be adding some standard pickling spice to it this time around; bay leaf, coriander, mustard seed, allspice, clove, juniper berry, etc.. I haven't done that on the normal with hams before but certainly for corned beef. Hmmm...

Txd, I'm loving this thread. Takes me back 35 years when I used to kill and process home kill. My kids and prolly most don't know how to do the old fashioned stuff. I did lamb and pigs. My grandkids would kill me if they knew. Look forward to end pics. I love ham.

I'm still looking for some starter pairs to start my sheep/lamb production. Nobody wants to let go of their breedstock so I've gotta wait for the lambs and start way into the beginning. Lol

Lamb priceS arE crazy here to. Last year they fetched up to $180 a head.

They're going about that price here too. Adults are around 220-250. Usually ewes are about 200 and rams will fetch 250 or more.

Gee. Is Forney really still that "small town" on the outskirts of Dallas. I'm going to have to make a point to visit at some point. I grew up in a small town in South Texas and it was my job to empty burlap sacks of horse feed into our feedbox in the barn, as well as opening bales of hay and storing the balin' war in a 55 gallon drum. Wasn't much around that homestead Dad couldn't fix with bailin' war and bubble gum. It was like duct tape before duct tape was cool.
Barbecue may not be the road to world peace, but it's a start.

I moved away from Forney about 5 years ago. I now live in middle of nowhere, USA. Lost in Arkansas. Lol

2 weeks in, phase 1 complete. Phase 2 starts now! Sugar and spice bath for 24hrs/lb. Started at 14 lb, now 10. 4 lb moisture loss in the salt/dry phase. Not too shabby!
