New Canadian bacon recipe
Trying a new one that appears to be ready. It was rinsed and ready to be get the pellicle on before smoking tomorrow.

It looks like pork loin that's been salted. I hear'ya though; that was my first reaction was that it sure was red for pork but then i studied the fat lines

The color is from molasses used in the cure and yes it is pork loin. I wish I could figure out why the pic moves or in this case flipped 180*.

If you're taking the pictures with your phone try turning your screen horizontal, works for me, I don't have a clue why

Thanks willie. I had turned it initially to take the pic and on my phone it looks like what willie had shown. When I downloaded it, it flipped 180*.

Well I’m proud of this batch. Sweet not salty and full of flavor. I took the meat off at the right time. Vacuumed 9 bags and a couple to throw in the refrigerator
