Yes I placed 5 jalapeños sliced in the dry cure hoping some of the flavor would creep into the meat to add to the peppered crust you see. The molasses really changed the color of it compared to the other piece you see next to it.

Waiting for it to cool before slicing. The color looks good I think but we shall see how it looks after the slice and fry.

That slicer is so worth the money. Holy cow 25 pounds slicers in under 15 minutes...20 total with cleaning it and placing it away from the misses.

I broke my kids. I made a BLT tonight with the cottage bacon and two of them that were against meat ate the two remaining pieces then asked for me to make more. Yes I know it should have been toasted but I couldn’t wait after that smell of cooking bacon.

Thank you both. Well worth the wait, flavor was over the top and broke three of my daughters from the anti-meat strike they were on within 36 hours. I’ve had more people after I made it ask for some. Not quite sure I want to give it away. You get it?
