Yes it called Cottage bacon. Take the butt, cut it is the thickness you want the cure it with whatever you choose for the allotted time, rinse, smoke until it reg. 150...

Between yesterday and this morning the pork loin/Canadian bacon firmed up a ton. The liquid is no longer the same. Thinner is that makes sense. Same with the shoulder. Science is so cool to watch work. I might have to fight with myself over the length of time. Washington just outlawed pits, fires and bbqs a few days ago Lee the misses and I said who cares. Mine won’t hurt nor cause a fire.

Yes, on the temp. burn ban. I live in the country and don't care. Its where straws are free to roam

Be ready last night so I’m placing them in to get their skin in for 24 hours. Love the color of the one cottage bacon/pork shoulder. It is a spicy pepper blend with jalapeños in the mix. By noon tomorrow, I’ll be slicing
