Vacuum sealing meat that’s cooked and in my case bacon
Do you cook it down first then seal it which it what is think is the most correct way of doing it or just drop it in the bag then seal it??

I place cooked meat in ready to seal bags, then drop in the refrigerator freezer for three or four hours until the meat begins to set up, then pump and seal, what this accomplishes is it sets the juice and or any grease to prevent evacuating from the meat and drying out your product. Next stop is the deep freeze. Not sure how everyone else does it, this just works for me.

Thanks for responding. That's about what i did. I let it firm up on the sheet pan then placed in the bag and sealed them

Sorry for the delay. I responded to your PM. I was super busy this weekend. Smoked 60 pounds of bacon and took the kids to an Astros game.
