Got sucked into the pork hole.

I was headed to class tonight when I got pulled into the Costco parking lot and the pork belly gods told me to buy and make some bacon. So I just couldn’t deny the request so I picked up this. I’m thinking 6 slabs of bacon and bacon burnt ends for the remaining section.

Half way through the process. Sunday can’t come quick enough. The waiting is so hard. Four kinds here all 5 pounds each: A salute to Texas with a peppery jalapeño, a Michael Simon version, the pork belly burnt end with sucklebusters favoring and the Michael Ruhlman version.

I checked my bacon tonight and they were firm enough so I pulled, washed and racked each of them. The cook begins tomorrow.

I hope so. When I laid it out in the smoker about 30 minutes ago. I found I could have fit another 20 pounds worth. Maybe next time...

Just pulled everything off minus the burnt ends. Wrapped them for the 1 1/2 hr cook. I did try a few prior and boy I get it now.
