I made 25# of stick sausage but I put 5 1/4 tsp of instacure1 in it instead of 5tap.will this still be ok to eat??

Enjoy it you are fine that amount will be safe to consume.

PT nailed it. You would technically be about 1 tsp less than it would have called for if it's 1/4 tsp per lb.
