Thanksgiving ham in the works!

Found a local source for hog hinds!!! Darn good price at 1.79/lb too. Grabbed one today to start the thanksgiving ham cure.

In its initial splendor. This fella is a biggun!!

And with me trusty hacksaw and 18T blade, I made quick work of separating the butt portion from the shank portion..

And she's all snug in her kosher salt bed. I'll need to change it out every couple days. Think I'm gonna need a LOT more salt.. I used half a box for this round alone.

I'm curing the butt end to take to work and pass out some samples. I didn't get pics of that, but, meh..

I'm not in Forney any longer. I moved out from there long ago. There is a meat market I used to frequent in Terrell. I'll dig around a bit and see if I can find the name.

2 week update! I am moving it on to phase 2; wet sugar cure. It spent 2 weeks covered generously in salt, now a day per lb in the sugar bath. I injected it all over with the solution to help speed things along internally. Should be about 10 days soaking then 4 days to air dry before smoke.

Here is the butt portion. 20 day cure. Smoked it up today with cherry and mesquite. 6 hours at 275. Turned out wonderfully! I can't wait to finish the shank portion for thanksgiving!!
