Smoked Honey Ham and Cheese Links/Sticks

Trying my hand at some Honey Ham and Cheese Links/Sticks. Had two boneless pork butts in a wet cure for two weeks. Pulled them out today and desalinated them, and they'll hang overnight and be ground tomorrow.

When you say ground, do you mean you mince it up??? Would seem a waste if you did??

It has been ground, spices added, and the cheese will go in it tomorrow just before it's stuffed and smoked.

At the moment, it's just a lug of ground pork. Did a test pattie tonight, and was happy with it. So tomorrow it gets stuffed and smoked.

Finally got around to stuffing and smoking these links. Happy with what I'm seeing . They are out of the smoker, and hanging to bloom. Later tonight they will be refrigerated, and sampling will happen tomorrow.

Here's the money shot. Great ham taste, a slight sweetness from the honey, and a little bite from the pepper cheese. Overall, it tastes like a ham and cheese sandwich. Just need to get some dijon in it.
