Jalapeno Infused Bacon

Did an experiment with 3 half pork bellies. Included some fresh roasted jalapenos in my wet cure.
Cold smoked for six hours
Out of the smoker hanging to bloom
Ready to cook
Time to eat

Not as much as I wanted. No heat, but a small amount of flavor.

Nice! I also wondered how the jalapeno turned out for you. I've not yet been able to get what I want from its incorporation
My next step is injection.

Be very careful injecting. It's very easy to blowout and honeycomb the internal fat. Been there, done that. I think the best answer is going to be in the steeping of the cure with the right amount of jalapenos in it.

That looks like some really good stuff.
In my case, for the last couple of years, been smoking/dehydrating/grinding jalapenos into a powder. I then sprinkle the powder over the fresh smoked bacon. Nice bite, flavor a little like chipotle pepper but not quite. It's better when I vacuum seal the treated bacon and let it permeate the meat for several days.
