on fresh sausage, Italian, Brats,
if i don't boil them first, but just cook them on the grill on low
i use the ground meat rule
i cook them to 165°IT
and as said above, i use my Thermapen and poke the probe in the end as to not break the skin
how do you cook sausage?

Hahahaha! Boiling is OK for fresh sausage. I boil mine from time to time. I add just enough water to cover it completely then boil until the water is gone, Then I sear each side to get some color. Serve on a hot dog roll with some mustard and kraut.. oh man, good eats there!

Oh no, understood definitely! Sausage and ribs are 2 different things though. Boiling ribs is a punishable offense by up to 5 years ROFL at every given moment!!
