Looking for central /south Louisiana smoked sausage recipe

I been making pork smoked sausage for 7 months and can't seem to find the right seasoning for the stuffing I like. Does anyone have a southern Louisiana recipe from around Ville Platte / Lafayette / Mamou area they care to share with a southern Louisiana man?
