This sausage was inspired by John Lewis of LA Barbecue in Austin. It's a Czech all pork sausage with roasted green chiles and queso cotija. So far, very happy with the cook. Another hour of drying/blooming, and 6 hours in the refrigerator, looking forward to good eats.
