Hill Country Czech/Mex Sausage

Postby jmcrig » Sun Aug 03, 2014 8:24 am

This sausage was inspired by John Lewis of LA Barbecue in Austin. It's a Czech all pork sausage with roasted green chiles and queso cotija. So far, very happy with the cook. Another hour of drying/blooming, and 6 hours in the refrigerator, looking forward to good eats.

All it needs now is an ice cold Bock and some saltines, and you got a meal.

You sure yer not Abe Froman, the Sausage King of Chicago?
