Started 15 lbs. of a pork and beef sausage called Texas Smokies that's long on cumin and garlic.
Mixed and going to the refrigerator to meld.
Stuffed and hanging to dry before the smoker.

We will be in East Texas, Edgewood. Tyler is the closest city of any size.

Try Rhea's in Tyler and Doc's in Gilmer. Both are tip-top. Doc's is my favorite. Even better than Pittsburg.
