Trying a new recipe tonight. It will be a smoked ready to eat chicken, green chile, basil, and sun-dried tomato sausage.
All mixed and in the refrigerator for the night to let the flavors meld.

Mark don't know what recipe you used but, here is one that I have. Have not made this recipe. I do however have about 30# of sun dried tomatoes. Delivered to us by mistake. CF
Chicken and Sun dried Tomato Sausage
5 lbs. boneless chicken thighs with skin
2 medium onions about 12 ounces, peeled and quartered
7 oz. red or yellow sun-dried tomatoes, soaked in hot water to soften (15 minutes), then drained
1 Tbs each of celery seed, thyme, and kosher salt
5 oz. water to mix the spices with.
2 Tbs Coriander Seed
2 Tbs Fennel Seed
2 Tbs Rosemary
2 Tbs Oregano
Be sure to grind the Coriander, Fennel, Rosemary & Oregano
Grind your meat, onions & tomato's. Add spices to the water, mix well.. Add spice slurry to meat and mix well.. Stuff into casings. Let sit in frig over night for best flavor..
