35 lbs of varied sausage!

Just as the title implies, I have 35 lbs of pork for sausage from this pretty gal pictured below. I bought her from family that didn't make the cut to get in the San Antonio stock show this year, for 50 cents a lb.. paid 150 for a sow that tipped the scales at 320. He cut me a deal on that 20 lbs since I paid cash and was the first one to show up with it.. Image

I'll be making 100lbs of deer sausage Friday with dad

Thursday going to make some before he arrives.....might have 20lbs for that batch

I hear Berkshire is supposed to be the bees knees apparently too. Looked up some info and I really got a phenomenal deal given they are pretty rare and such. I can say that she certainly had a great deal of marbling, as mentioned in the breed info. Gonna cook some up today and see what the fuss is all about. Lol

So I have about 30 lbs of a "basic" sausage made. This is seasoned with a bit of garlic and onion powder, salt, pepper, and some pink salt. It has a very light flavor on its own, kind of a base to work from. I made about 6 lbs of breakfast sausage from it already, just added some paprika, sage, a touch of brown sugar, and red pepper flake. So tasty!
I need to get a new blade for my grinder today and am going to TRY to talk the wife into letting me get a dedicated stuffer while we're at it.. Guess I'll cross my fingers on that. Lol. Gonna make some bratwurst and garlic sausage today, and may try my hand at some kabanosy.

Yeh, Snake River Farms has Berkshire St. Louis ribs that weigh 2lbs and sell for $24 :shock:

My first real day making sausage......I soooo want a stuffer... :mrgreen:

124lbs.....couldn't really justify the stuffer right now....but I will get it for next year

I have a #8, 1/2 horsepower Cabela's grinder, it's the smallest of their commercial line.....can't complain, it does great

I smoked 24 pounds, the last set is blooming right now....

I have 10 pounds of PepperJack to smoke next weekend...

A gram scale is really nice when it comes to measuring seasoning.....especially curing salt....
