Maple/Chipotle Beef Bacon

Got a 10# piece of beef plate, and thought I'd makeup some Maple/Chipotle cured beef bacon. Cut the slab in half, and rubbed the cure in.

Curing as we speak. Hope to start the cold smoke on Saturday.

Bacon is out of the brine and has been double rinsed. Here it is hanging to dry before the cold smoker.

Well, I got the beef plates in the cold smoker along with a couple of pork bellies. Everything is a maple-chipotle flavor. The finale rub before the smoker was a very light coat of maple syrup with a dusting of chipotle powder. Will cold smoke for two days in my Good-One Marshall smoker.

A little bit ago, I pulled the pork belly and skinned the rind. Wanted to get some of that color to that side.
