Making Some Black Pepper/Chipotle Bacon

Got a pork belly, and am makin' some bacon. Doing a cure with black pepper and chipotle in it.

Belly is squared, trimmed, and ready for the cure.

OOHH!! Can't wait to see this one. Why trim before though? You can trim after and save those good bits for the bean pot!!

Along the bottom side of the belly there's generally a flap of just skin and fat, that ends up in sausage. When it's done cooking, there may be some trim that ends up in the bean pot. 8)

Craig, you gonna be right on. Those are some really nice looking bellies. I need bacon but can't find any at good price.
$2.49 pound here and you get what you get (no choice). Wish we had a good meat market. Our Mexican store is the best we have. CF :D

I got this from Restaurant Depot. Had to buy a case, 3 bellies, but the price was decent, $2.05 a pound. This is probably a long shot, but if you've got a Chinese Market close. They generally have pork bellies.

Can't wait to see how it turns out. I've got my first belly in a cure right now and plan to cold smoke it on Sunday.
