I tried a different recipe out on the summer sausage this time using dehydrated jalapenos. I smoked them in pecan until 155 and they came out really nice. The kabanosy turned out good as well. It's a basic kabanosy recipe, but I replaced the caraway seed with crushed red pepper. I also used some vitamin C to brighten it. The color came out really nice. They're hanging and drying right now with some air blowing on them. I'll post up some of the finished pics later. The new smoker did an excellent job holding correct temperatures; not one single heat blister on any of it.
