Most of my sausage is hit or miss,

I suffer from the h or s syndrome as well, mostly miss, I will spend most of a day making a 3 to 5 pound batch, stuffing, cooking, cleaning only at the end of the day to decide, no I am not even going to insult my wife's palate with this and in the trash it goes....
I like the idea of more accurate, which in turn should equal positive reproduction results...
