Wild chorizo!

Yup, I've gone and done it again! More sausage as I trim down my major cuts from the wild hog. Made a batch of chorizo this time around. Very good, subtle flavor. Not as spicy as regular, and nowhere near as fatty. You can make patties, or mix it up with eggs, potatoes; whatever you wish!

Looks great! This has me craving some good chorizo. Now, I'll have to make a batch. Thanks a lot! :D

I make a green version with a lot of cilantro. I'll have to post up some pics when I do it.

chorizo and eggs are great...
chorizo in refried beans rolled in a flour tortilla and deep fried...extra good...
ya got a good looking pile of meat there..
