Started a 20# batch of Summer Sausage with Pepperjack Cheese. Recipe came from Gunny.

Stuffed and drying before the smoker;

Wow. Show us some slice. Preferably with hard cheddar, pintos, saltines and beer. On Thursdays back in the day in old College Station, that was called "supper".

Nice! I am still working to piece together all my items needed for a cure chamber. Just about got it all. Then, I pick up my fridge and put it all together. I plan on some prosciutto before too long. My goal is to start it by fall so it will be ready for next holiday season. We shall see though!

I've got all the parts and pieces for mine, just need to put it together. Probably won't get done till Sept/Oct., to hot here.

All i'm lacking is a temp probe now :cheers: By the time I get everything all put together and set up, I can start my first ham project. I can't wait!
