Hot Links!

yeah, the tying process is a pain with collagen casings. I'll probably use fresh next time so I can link them, but the taste was on. I used Big Wheel's Texas Hot Link recipe with a few modifications. I cut the beer out and just used water. I cut the anise out because I don't care for that overpowering spice. I absolutely cut the MSG out. I added 1 extra tablespoon of salt. Next time I'll double the crushed red pepper, as I prefer mine to have a bit more bite to them.

Rambo, great story! I've heard of that place, but I've never made it. I'm going to make a point and get down there pretty soon. It's an hour and a half or so from where I live.

Unfortunately it sounded like you better hurry. Those old places are soon to be a thing of the past.

For me, if a recipe calls for beer, I try to see if I can somehow double what it's asking for! Those hotlinks look to be on point amigo!

Doc's is still in Gilmer. I had some hot links recently. I like to pick up raw links and cook them on the smoker at the house.

Sancho and I stopped by Doc's a couple of weeks ago. I must say that they are some of the best hot links I have ever eaten. I've always been a Pittsburg fan but Doc has them beat.

The wife wants us to get into sausage making when we move down to Texas. I'm looking forward to it. I like a host of link sausages, and hot links are right up my alley.
