Its not bacon but sure taste good.
Its a Pork Butt, boned and butter flayed. Dry sugar cured just like bacon, smoked with hickory.
Sliced like bacon, taste like bacon "kinda", not as much fat as bacon. Anyway it was fun and I didn't have a pork belly and was out of bacon. CF

PT there is one called buckboard bacon. I have made it but I used a regular bacon cure on this one. And did the slice rather than roll and tie. I think the cure makes the different taste. being a Butt it is kinda ham tasting. Then again it might be the lack of fat. Belly fat has its own taste, "Good" CF

Tex, it cooks up more like ham, because of being low fat. However it does taste kinda like a bacon, ham cross. Its good, I got just the right amount of salt- sweet taste. CF

That it does! I have tried to get some thin slices and fry it up like regular bacon and it is not only difficult, but they don't turn out near the same. Yessir, this is a good, thick-sliced alternative to belly bacon, and make for some wonderful sammiches!
