Jerky!

Postby Txdragon » Sun May 20, 2012 3:35 pm

Who doesn't love it? It's almost a staple in my home :laughing7: Really expensive to buy, about half the cost to make. Here was my first attempt. This was brisket flat, sliced about 3/16 +/-
Marinated with a common google jerky recipe for about 5 hours then in the oven on lowest setting overnight. This was taken about 9 hours after putting them on the rack.

They were so incredibly tender! I need to tweak the spices a bit and try a dry rub version rather than marinade. I feel this will produce a more brittle result, but I imagine I can adjust the time spent drying to avoid this.
