Found good places for Tri-tips and Ribs, but I need a good place to purchase uncooked sausage in austin that will be good on the smoker. Any suggestions? Cooking for 100 folks, so bulk discount would be a plus.

A lil far away but I like Greens Sausage House in Zabcikville, south of Temple. Some of the best sausage around, old style butcher shop and bakery (kolaches). Gonna stop by next weekend after a family reunion and load up.

Closer to Austin, try Taylor Meat Company in Taylor, I haven't tried the sausage but we have purchased meat for large cooks in the past, good prices and great meat.

Longhorn Meat Market on E MLK and Texas Sausage Company on E 12th. Both are really good. TX Sausage Company will knock a little off the price on orders over 25 lbs.

If you are looking for jalapeño sausage, then look for it made with dehydrated jalapeños they have the best jalapeño flavor.

I went with the Longhorn Meat Market. Got their beef and pork sausage. The folks I cooked for really liked it. I was looking for somehting more like Smokey Mo's or Rudy's be the texture was much different. Nice change.

next time try their turkey sausage. It's really good. You're right the texture is more coarse then what most folks are used to.
When we do cook offs or camping we'll take the left over beef sausage from the day before and break it up in our eggs for breakfast. hard to beat.

Go to Elgin, and wish you had never gone anywhere else in your life for sausage or any other meats.

Being a citizen of Elgin and appreciating the title of Sausage Capital of Texas, Jarhead actually has the best point of the thread - Make your own and you will never want to buy anybody else's ever again!!! Homemade Sausage Rocks the House.

Most of the larger HEBs in Austin area and Costco. Costco's price is high at around $6.49/lb, but it's nicely trimmed choice, so you aren't paying for any fat trimmings. HEB's price is $4.49/lb, but it's select that is fairly well trimmed with a slender fat cap on the bottom.
