For all: This is the best get started in sausage making guide I have ever seen check it out.
David has cut out the fluff and provided exactly the info you need to know to get started in sausage making.

Looks great! FYI, "kielbasa" simply means "sausage" in Polish.

Good job, very helpful. Does anyone have a video on someone tying horse shoe shape sausages? My grandpa used to tie them so fast, would have just one continuous string. Then he would go through and cut the string and would have several horse shoe links. I guess it is skill, because I can not do it. David S how do you tie the ends together?
