For those that have a hard time finding pork belly at either a reasonable price, or at all, the all versatile pork butt can be used as well! I make bacon using this cut all the time. It's referred to as buckboard bacon, and is nearly the same curing process as posted earlier. Sorry for the bad cell phone pic :violent:
