Apple and Pecan Sausage

I make several types of sausage, but my son and I got to talking about a different flavored sausage. We decided to do an apple and pecan summer sausage. We are going to take our spice mix and add apple sauce to make a batter, then take apple pie filling and chop it up to a fine mix. We didn't want some one bitting into the sausage and getting a hunk of pecan, so we used a coffee grinder and minced up some pecans. We are going to stuff it 3 different ways. First in the standard 3 pound casing, some in a 1 pound casing, and some in a 32 ml casing (like Brats). I will post some pics and results when were done.

Well the sausage turned out really good. The only thing I would do differenant is I would not have chooped up the pecans so small. I am going to have to resize the pics to post. I will try to get this done tonight.
