Chicken, Feta and Spinach Sausages

Did these a while ago, just thought I'd share...

Ingredients

5lbs Chicken Thighs.No Skins.
5lbs Chicken Breast No Skins.
10oz Feta Cheese
1 Bag Of trimmed Fresh Spinach or 2 bundles (trim yourself)
3 TBS Black Or White Pepper
3 TBS Kosher Salt
3 TBS Marjorum
3 TBS Paprika
1oz. Chicken Stock Per Pound

All de boned and ready for the grinder. I have a nice bag of bones left over for stock...

Grinding up the Chicken...

Mixed up the Feta, spinach, Chicken broth and spices in the bowl and put it in the fridge to rest for a couple of hours...

Stuffing the casings. I twist them after and hang them in the cold storage for the night to firm up...

I did these yesterday so today I just had to grill a couple up...

Zeeker, those look outstanding. But I'd be afraid to stick chicken in my grinder.
It was broke in on venison, beef and pork only. :lol:

Great job on the sausage, I'm not a big fan of Feta but I think I might give this recipe a shot.
Thanks for sharing.
How bout some more beans Mr.Taggert? I'd say you've had enough!
