Gonna try some Cheddarwurst

Got in my high melt cheddar the other day. Think I'll make up 5 lbs of bratwurst with the seasoning I ordered from Butcher and mix in half lb of cheddar and cold smoke it over night, and get it to temp tomorrow morning.

Only got one pic. Tried to take some smoking, but my phone is a POS. Turned out pretty good, maybe a lil bit too smokey, not sure if the smoke flavor will mellow out with a lil time in the fridge or not. The high melt cheese worked really good, overall success.
