I want to thank PapaTom and Toby for a great time in north Texas. Tom had a lot of knowledge on sausage making and a great willingness to help us all learn something new. Toby was a great host and the facility was awesome. You couldn’t have asked for a better setup or teacher for this gathering. To all the people that were there, it was awesome to meet you all and I will see you at the next get together.

First thanks for the kind words I had a good time helping and showing off my newest investment in smokers.
Next a confession if you make some brats from a recipe I provided they should be better than the brats you had for lunch. Chad later pointed out the error in my ways, the scale was set to kilograms when we weighed the meat and the seasoning mix was for 5 lb. What we ended up with was 11 lbs. of meat with seasoning for 5 lb. Oh well the brats disappeared anyway. I did check the scale before we went back to cut the pork up but not again before weighing. For lunch today I had one of Toby's jalapeño cheese brats and it was spot on wonderful, plump, juicy, tasty bueno!
Always good to meet and work with such a nice bunch of folks.

PT - I thought those lunch time brats were delicious. I didn't find anything wrong with them.
As for my jalapeno-cheese brats, I haven't cooked any up yet so I'm glad to hear your report. How was the heat level?

The heat level was on the low side but that will probably vary by link depending on the number of seeds.

My friends raved about your brats and they were very good. I like a strong taste for sure. poaching some sausage as we speak!

I would have never thought that a mistake was made on the brats, they tasted great to me, even took a few home, A big Thanks to Papa Tom and Toby for putting on a Great Event, i really learned a lot about sausage making and got to meet a bunch of great people, Looking forward to the 3rd event and try to get more involved with the sausage making process, Also a shoutout to Ron and Beth for letting us use their party barn, its not for sale is it?

OK all at the Wurstfest saw my cold smoker pictures are contained in this string. Well the pilot does not shut off engines once cruising velocity and altitude have been attained. So here is my next step up a new powered larger version.

Also by popular demand (actually some casual interest) I have developed another casing washer and have a few to sell if you are interested.
No name yet but Gut-Flush or IntestiGator come to mind.
Feature NSF compliance, hose thread hookup, ¼ turn valve, inline and angle models.
