Bacon ends will work fine but beef fat would be a last resort it simply is not as good as pig fat. Beef fat does work in some of the semi-dry and dry sausages like salami but we won't be doing much of that.

Cool, I can get a good supply of that, plus what comes off of my butts. Is salt pork of any help?

I wouldn't know how to guage the salt in a recipe using salt pork.

Try Brookshires, I live out in Azle and I call up there to the buthcer every now and then. He usually has a few trays and if not will save me a few over a couple days. Call your local processing plants, this time of year they are full of deer and should have tons of pork fat on hand, usually they don't mind selling it for about .99 a lb. They make some cash on it and its easy turn.

FYI when I went to brookshires he sold me everything he had, only 7.5lbs bit hey at .19/lb it was a GREAT deal! :mrgreen:

Alright boys & girls....The date is quickly approaching! I'm trying to put together a headcount and have gone back through this thread and picked out the names of those who thought they would make it. We can also use this list to show what everybody is bringing.

For the most part, everybody that plans on going home with some sausage should plan on bringing some meat and a some casings if possible.

You might want to bring a chair with you too. If anybody thinks of anything else, just let me know - I'm all ears and just want everybody to have a good time.

Not sure if there are any ballgames going on that day that might keep you from coming, but there will be a flat screen with Dish Network there so it's likely we can turn the game on while there. :wink: I think all of the football games that week are on Sunday though.

I always use pork butt supplemented with bacon trimmings I get at the grocery store.

Yes - there are deep basin sinks. The barn we will be in is health department approved for catering.

Got 2-2packs butts, prolly around 35 lbs or so. Made the salsa today. Will get to academy for some casings before we head out. See you guys there.
