I spent yesterday afternoon making up a batch of homemade boudin sausage. My last batch didn't have quite the spicy kick I was looking for, so I added some Sucklebusters Texas Gunpowder to this batch. That was the ticket!

Looking great! I used some chipotle gun powder in my new experimental rub and was pleased with the result. Boudin is a fresh sausage right (no cure)?

It's actually already all cooked before stuffing, Dats. It's boiled pork butt, rice made with all of the boiled stock so you don't lose any flavor and spices. You are really just re-heating it when you put it in the grill. I had some chipotle gunpowder as well, but I really just wanted to add more heat and not complexity to the flavor which is why I went with the regular. Come to think of it, I don't think I have even tasted the chipotle yet. I keep forgetting that I have it. I was really happy with the result.

I did however forget that sausage making of any sort is not a one person job. I asked my wife to remind me of that the next time I decided to make sausage while home alone! :lol:

OMG OMG OMG........ how much would it cost to get some from you???? i LOVE me some boudin!!!! i lived in southern lousianna when i was a kid...... loved eating boudin, and crawfish!!!

About 1/2 dozen of those links cut about an inch long, rolled into balls, then dunked in some egg wash, panko bread crumbs, and deep fried till golden brown would dang sure hit the spot about now.

i'll look it up.... but i do not have a way to pack the sausage. but in time i'll be getting it.
