Using a Home Dehydrator

I just took my first batch of beef jerky out of my new dehydrator. IT WAS GREAT!!!!! I used a very lean rump roast, cut it into 1/8" strips and marinated it overnight in one of the Jerky/Cure packets that came with the dehydrator. It only took a little over four hours and between my wife and I, it is almost all gone already!!! I would stop at Woody's on my way to/from Dallas and spend a lot of $$$, now I can make my own.

There is a lot of information and recipes available online and I have read that Bass Pro has a nice selection of Jerky/Cure types.

Anyone have any info, ideas or recipies?

Academy sells some called Backwoods,I like the hot or you can get uncle bucks at bass pro its the same stuff.

I we went by Academy today while out in Rosenburg for a birthday party and saw what they had, which was not mch. I'm kinda bummed cause the cure has A LOT of sugar in it. I'm going to assume this is the case with most prepacked jerky products. I may need to do research on how to make my own without, or with less, sugar. I looked on Amazon, Bass Pro and Cabella's web sites and they do not list the ingedients used in the jerky products they sell. Wonder why.

i never use a cure,,, as it does not last long enough around hear to need it.

all cure's will be full of salt and sugar.


what are you trying to accomplish with cure?

I used the cure because it came with the jerky seasoning.

So I don't need to use a cure? Don't want to get family sick by not making jerky correctly. I'm not happy that the cures are full of sugar.

I also read ha once the jerky is done in the dehydrator you should put it in the oven for about 15 mins to pasturize it. True?

If you want to make jerky without sugar simply use Morton's Tender Quick in place of the salt you would use. Now MTQ does contain sugar but very little so little that the nutrition label lists carbs @ 0%. I would recommend using a cure to be safe although there are many that don't and apparently not many of those die young.

So, don't use cure and take a chance of dying? Hummm.....

MTQ can be found just about anywhere. Just check where the salt is sold. I got mine at Walmart I think.

walmart, kroger, and albertsons all have MTQ. You really should use it even if you eat fairly fast. Always be safe.
