Casing question

How long do hog casings last in the fridge. I made some brats today, and it seemed like they tore rather easily. these are probably 4 months old.

If you have them stored right, 4 months should be fine! I've used casings a lot older than that!

Bob, the ones I buy local are frozen. What I don't use goes back in the freezer. I haven't really noticed them being any different after storage. CF :D

I stored some for a couple months in the fridge but didn't trust them and tossed them so I started adding vinegar and although I haven't used any that have been stored a long time I do trust they will be fine. The ones I use are salt packed and are thoroughly rinsed when taken out of the package.

If the casings are salted & kept either in the fridge or freezer they will last a very long time. I have kept them over a year in the fridge and they are fine. They must be the salted kind.

If you get them in the solution they won't last too long once opened unless you freeze them.

If they're stored properly in a fridge and kept on salt casings can last literally forever. Every time I'm done using my casings and if there is any left I dump a bunch of kosher salt in the baggie and throw em back in the fridge. No smell and they're still pliable.

It has been a lone time since I have used any but if I remember right they were cheap... We made a lot of sausage at one time so They were dry, and I think in some kind of salt. We soaked them in water. They were in cooler at the store. I think we would save them till next year but freeze but only the dry ones.
