+1, Wanted to say a BIG THANK YOU to PapaTom and Momma Tom for the great Wurst GTG. They put a lot of hard work into this great GTG, a great time by all. It was great to see some old friends and there families ,also our newest Deputy and his wife. Papa Tom put on a great class today and I think everyone learned a thing or two about sausage. Great food and fun.

Sounds like a great time. Really wished I could have been there. The Mrs 1 year probation is up in 3 months so she can transfer to any Federal Agency/Department and keep her current pay level. I think she's taking the bait as whilst I was watching the snow come down I saw her perusing the 2010 official Texas Travel Guide :lol:

Had a great time yesterday at the GTG and more importantly so did Mrs PT. She said "What a great bunch of folks, every one of them". She even ate a whole ABT now this is "Ms. Ketchup is too spicy" we just might make her a real Texan yet.
It also attests to the quality of the chow man WoW!
OK now I have to go into damage control. I am smoking the Andouille and kielbasa this morning and realized that I committed a sin of omission yesterday. When smoking your sausages and taking them off the pit @ 155° immediately plunge them into ice water to quickly bring the temp down to > 100°. This will help keep the sausages plump.
Now of course don't plunge the ones you're going to sample!
BTW sampled the Andouille and Jalapeño cheese this morning and they are both really good and not as spicy as you might think considering all the spice we added. The andouille should be really good in gumbo or dirty rice.

I can't begin to thank Papa and Mama Tom enough for hosting this great get-together. We all worked our tails off, but it was a fantastic day. It was really great to meet many of you face to face that I have only talked to via the web for years past. Krista and I feel that we have made many new friends to hang out with for years to come. I tell ya, Papa Tom has quite an impressive spice collection. Thanks PT for the willingness to share your home, ingredients and knowledge of sausage making with the rest of us. Limey & cowboydon, thanks for covering that last leg for me. It was midnight before we got our son picked up and back home. We were whooped puppies! :lol:

Yep, it was a great time. Thank you very much Papa Tom, you and the misses were great hosts. I enjoyed meeting everyone and I know Chance did too. Thanks to everyone for making him feel like part of the group. Everyone was great with Chance and we both had a great time....next time I'll make sure to drag the misses along, she would of had a great time as well.

WOW!!! What else can be said. This was an event that I will continue to enjoy for many years to come. Papa and his better half, were fantastic host to this event, and we all appreciate you both for doing this. Guys as others have said, the meals were awesome, the instructions were spot on, and I can assure you if your not already a sausage maker, you missed an opportunity to learn the art from a very knowledgable teacher(Papa). It was good to meet another member of the Forum Toby and his wife. Donna and I had such a great time, and cant wait to do this again. Thanks for an awesome time everyone!!!!\Great pics
