I have mentioned for some weeks now that I have planned a get together for the purpose of exploring sausage making. The somewhat firm date is Mayday May 1st.
Here is the basic plan:
I will do a demonstration by making some fresh bratwurst. Then I will demo making a summer type sausage that could be done at a comp that sausage will be cured and smoked.
Then it will be open for anybody that has a desire to make their own sausage. I can provide assistance if needed.
Spouses welcome and encouraged to attend this like all GTGs we've had is a PG family event.
Lunch will be the aforementioned homemade brats and potluck bring anything you want. I will make some of my storied bread pudding and Mrs. PT will no doubt make some potato salad or something. Bring your beverages of choice and there will be iced tea.

What is needed:
I have a meat grinder, mixer, stuffer and refrigeration. If you have any equipment you'd like to bring feel free any additional equipment will speed things up.
If you want to make some all you will need is the meat and possibly some ingredients. You can PM me with what you want to make and I can provide information. I do have a good stock of supplies so you may not need anything but meat and maybe some casings to go home with a batch of links.

Oh I live in Oak Point Texas that is about 8 miles east of Denton.
Let us know if you can attend, weather and lack of interest are the only bad guys.

PT, that sounds like a great idea for a get together and learning session all rolled into one. Sure wish I were close enough to attend because sausage making is definitely on my "to learn" list for the very near future. Not to mention that I'd like to get to meet some of the folks here face to face, rather than just on the computer screen.

As you know I am in Papa. I will be bringing a grinder and casings, and most def something to add to the meal.

PT - that sounds like a plan. I am 95% sure I can be there along with my bride. I'll bring my grinder, stuffer, casings and I have a freezer full of wild pork and also some pork fat I can bring and share with all. Looking forward to meeting you all!

Laura you'd just have to take off a day earlier than most....
Toby glad you have some fat I'll try to get some as well but as you know it is a little hard to come by. I'll show how to make low fat sausage to but the stuff with real pig fat is better.
I'm anxious to do this it should be fun.

Ok if y'all would PM me with your email address I'll send you a bunch of sausage recipes so you can peruse and find some that sounds good. If you find something you like and don't have the ingredients or don't know where to get something hit me with a email.
I will also include directions and my phone #.
I talked to my local butcher and he said he could get me some pork trimmings and Tex Toby has some so we should be in good shape.
Looks like there might be some weather Thur-Fri but Sat looks good GAME ON!

Well because sausage making takes time I'm thinking about starting about 9:AM. Of course when ever folks can show up is fine we'll just have to fill in the blanks.

Dadgummit, I need this know how. Got a stuffer for Christmas that I haven't even used! But, living in the beautiful Hill Country (Kerrville) makes it quite a trip and a demanding new job means no this time. :cry: Please take a lot of pictures and hopefully some video. Ya'll have fun!
