Just got done cooking the pickle. Used Papa Tom's recipe viewtopic.php?f=47&t=6701 but with a twist or two.
2 Quarts Rocky Mountain tap water
3/4 cup packed brown sugar (medium brown)
3/4 Kosher salt
2 Tablespoons cure #1 (LEM)
1 cinnamon stick (from the Asian Market, package not marked at all )
8 whole cloves
1 tsp ground Allspice
8 black pepper corns
12 Juniper Berries
1 piece candied ginger (also from the Asian Market, package labeled in Chinese)
Brought it all to a boil for two minutes then removed from heat. Cooling now. Once it stops steaming I'll put a lid on it and set it outside to cool down to 38° before injecting the 1/2 loin.

It may just be where I live, but I have never seen junniper berries. Is there a substitute, or can they be eliminated?

Safeway or the box stores should have juniper berries in the spice section. They are the essence of Gin. I suppose you could eliminate them but I bet the box store has them.

I've made this before but it always seem too salty for me. This one worked out much better. I was a tad shy on the cure but it worked out ok.
Wife likes it sliced thin so she can chop it for omelets, I like it sliced thick like a ham steak.

you can get juniper berries at a wine and home brew store if you have one close as for the rocky mountain tap water I am having a hard time finding that
