Chili Cookoff Question

I am planning on messing around with some chili recipes over the winter and get ready for a backyard type cookoff next year.

I have attended one cookoff and never competed in a cookoff. I have a question or two as I'm sure a few of you have done chili cookoffs before.

I assume that they have a worksheet or something where they grade different things on each chili sample turned in. Any ideas on what areas are graded?

What are they looking for? A different type of chili (dove, backstrap, etc), just good ol flavor or what?

Any good websites to visit?

I've heard the more varieties of beans you got in the pot the better and its better to have more sweet (like Chef Boy Ardee) than heat. What else, oh yeah, no beef -tofu is the latest craze :out:
