OK, here's the deal. I got class today at 9:30 in the mornin; I couldn't sleep and I got some extra venison sittin in the freezer and a few adult beverages. So here comes a good venison chili recipe. (From what I could Remember) Here's what I did.
STEP: 1
3 TBS-Canola Oil
4-Venison Tenderloins-ground or finely diced
1.5 Tsp-Kosher Salt
Add canola Oil to 3qt. pan. Heat to Med-High. Add venison & salt. Brown well.
STEP: 2
Add 14.5 oz. can of diced tomatoes w/chilies plus 1 sweet onion diced --- Simmer 5 min.- while stirring
STEP:
Add:2-cup of beef stock
1-TBS-Onion Powder
1-TBS-Comino
3-TBS-Chile Powder
1-TBS Crushed Red Peppers
1-TBS Cayenne
1-Bay Leaf
2-TBS Black Pepper
2-TBS L&P Worcestershire
3-TBS ALP Flour
1/2-cup of dry red wine
1/2 cup of your favcorite salsa. Not "Pace", REAL SALSA!!!!!!
Stir all seasonings in and simmer/covered for a minimum of 30 min.
Drink a few COORS and enjoy!!!!
This recipe is enough to feed 2 HUNGRY COWBOYS. Double it up if you need more. And for the minimum amount of respect, please don't add beans.
