Axis Deer Chili !!

Hi yall !! Long time no see !! As most of you know Ive been fildlin around with getting the chili just right. And some of you might remeber my Uncle brought me some Axis Deer for Thanksgiving. Well I think I found the recipe I really like the best. I used the deer meat but I think ground meat would be just as good if not betterr.

Me and my Brother gave my Parents a weekend at Gaylord for Christmas. Well they brought us back some stuff and one of the items was Truly Texas Chili seasoning. I kind of chuckled because I havent found any store bought chili seasoning I cared for, let alone some overpriced product with the big Texas slapped on it. Well I was wrong about this stuff. It turned out to be some of the best chili I have ever had, and very simple. Heres how I did it........ :thap:

2 pounds Axis Deer (cut in 1/4" pecies and cooked)
1 can Hot Rotel (blended)
2 cans water
1/2 purple onion (did not sautee)
Jalepenos
1 can kicney beans (with juice)
1 box of True Texas Chili seasoning. I added about 3/4 of the red pepper, and added just a little masa at teh end.

Mixed it all and cooked it on low for about 3.5 hours, stirring often. One thing I noticed about the seasoning is there is alot more seasoning that goes in than most recipes Ive used and seen. Before I go out and buy a bunch of the stuff Im gonna double up on SB in the next batch I make and see if that doesnt do the trick !!

Oh and Ive seen folks around here put sour creme in there chili so I gave it a try. Pretty good !!

Im no expert, but I would say about the same... At least the axis and whitetail I have had anyways.. :dont:

axis deer is not even in the same category with whitetail or mule deer. axis meat is more like beef or elk and the taste has a sweet flavor all its own.

Not only did it give you good meat for the chili, but I see you were able to make a cool zoot suit jacket out of the skin. Now that's sustainability.
