I agree, but also will state that adding beans to the equation will also differ your spice flavor. I will only add beans if my acidity is too high or if I made it a little too spicy.
I don't like beans in my chili but my wife does. I usually do like most to keep from a divorce and just cook the beans on the side. I usually make a big batch and use the leftovers in a lot of different recipes so the added beans cut down on some of my possibilities.

Ya know, I voted no beans, and i stick by my vote. But honestly, I havent seen a picture of a pot of chili on this forum that I wouldnt dig into. Beans or no beans.

To be honest there were times in the past when in some circles this was a 'come-to-blows' topic. I've mellowed a bit in my old age, I guess.
I have learned over time that as mentioned above a lot comes down to regional preference. Research into the dish has shown that 'chili', or 'chile con carne', which originated in Mexico was originally called "carne con chile", and was subsequently turned around once Texans got ahold of it. I have heard of many things added in there, possibly the strangest is spaghetti noodles in Cincinnati - where the spell it 'chilli'. Whatever.
I also used to do competition chili, and no matter what anyone says, that's no one's favorite eating chili! Maybe we ought to start a separate section under the "BBQ and Cooking Forums" section just for chili, and then perhaps we could all contribute a favorite chile recipe. I'd be willing to give up my best - how about you all?

I posted a recipe for the struff from Cinci back in March. Link below. It's about the wierdest chili I've everymade from an ingredient standpoint but was good. The Mrs wants me to make a batch up again soon.

Seems to me that chili is a subset of any/all above.
Would a chili forum benefit the Board? If so, how?
