It's Hatch Chile time
just during the months of August & September
this is what they look like when they come out of the roaster
I clean them up, cut off the tops, scrape out the seeds
and put them in my little hand crank food processor to chop them into a coarse chop
I buy a lot of them and bag them in small batches- then put them in a larger freezer bag for later
I buy mine out of the roaster at HEB.
they have a bunch of different products made with them.
look for the display in the produce department.
Fiesta stores will have the un-roasted chiles in the produce department starting next week.
Hatch chiles are the NewMexico chile grown in the RioGrande River valley around the small town of Hatch
The NewMexico chile tastes different where ever it is grown
this is the history of the New Mexico Chile - a great read

Picking up 25# tomorrow. I clean, stem, bag, tag and freeze. Hopefully they’ll last 12 months.

Re: It's Hatch Chile time
Captain I just noticed the $ per # on the packaging. Maybe it’s the volume I buy at but I get 25# for $24.99 plus tax just over $27 and that’s roasted. At $3 a pound I’d all most have to pass or a the very least cut way down.

Re: It's Hatch Chile time
They were just setting up the Hatch Stand at HEB when we were there yesterday so I'll have to go back soon.
Thanks for the headsup, Capt'n
