Excellent advice, especially the draining of the grease and nice plan with the cornbread on the side.
Be you must include beer for refreshment.
I think it may be a law in Texas something like: You must have a beer while cooking and eating chili.

+1 on the admonition to try Frito Pie (the Nat'l Dish of Texas!)

I bought one awhile back as well. I taught the Mrs how to boil water and drop the bag in it to heat up her meals. Progress.

We use our vacuum sealer a bunch.
Hint for sealing stuff with liquid - fill the bag, freeze, and vacuum.
Dropping frozen bags of pulled pork or brisket into simmering water works like a charm.

Yes, EH advised to fill the bag then drop it in the freezer for an hour or 2, then hit it with the sealer. Great advise.
