With the cool temps coming this weekend, decided to whip some up an let sit till Sunday ball games.
Never used the pulled butt before . Will sure do it again though !
2 lbs chili meat
1 ring Chapel Hill smoked (diced 1/4")
1 lbs pulled pork butt (diced 1/4")
15 oz Rotel with diced
30 oz Ranch style beans ( I like beans ) sorry guys.
15 oz tomato sauce
8 oz tomato paste
1/2 red bell
1/2 yellow bell
1/2 green bell
1/2 white onion
1 Serrano
1 jalapeno
1 chicken cube
1 beef cube
step 1:
dice peppers and onion then blend almost to purée
brown meat and drain
add sausage, pork butt, Rotel, sauce, paste, beans, peppers, 12 oz water
4 tbl chili pwd
1 tbl SPG
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp red pep
beef and chicken cube
12 ox beer ( I used Modelo Especial ) what I was enjoying at the time.
float the Serrano and Jalapeno
bring to boil and cook for 45 minutes.
Step 2:
2 tbl chili pwd
1 tbl SPG
1/2 tsp red pep
1/2 cumin
tip off the Serrano and jalapeno, squeeze the juice in
cook for 30 min.
tiny bit of Massa to thicken it up a bit and start the sampling
